Zgardan’s creativity is reflected in the preparation of dishes such as cep, which is served Italian-style, thinly sliced, sautéed with oil, pine nuts, pine nut praline, arugula and two types of pepper that give it a spicy touch. In addition, the chef predicts that the pheasant with fennel and cabbage will be a success, as the dishes return empty from the tables.
The menu also encompasses timeless classics, from salt-baked sea bass and steak tartare to crayfish rice. To keep the gastronomic experience alive, a service reminiscent of the old days has been implemented, where waiters would plate at the table, allowing the aromas of the dishes not to be lost in the journey.
