A decade ago Nap Molino was founded, the restaurant with authentic Neapolitan pizza and locations in Barcelona, San Sebastian and Madrid.
The pizzeria was born in 2011 and its owner, the Neapolitan Antonello, says that the name of the restaurant came from the English acronym: Neapolitan Authentic Pizza. This is the origin of NAP, the abbreviation with which the Naples airport is also identified.
At the beginning of 2021, the wood-fired oven was turned on at 485 degrees to prepare the stars of the house: the margherita pizza and the “cosaca”, one of the oldest varieties of the Neapolitan tradition.
Recently, the Associazione Verace Pizza Napoletana, AVPN, the Naples-based organization that has been regulating the legitimacy of margherita pizza since 1984, welcomed Nap Molino and granted it a legitimacy card.
The certificate supports the fact that Nap prepares authentic Neapolitan pizza.
La margherita: authentic Neapolitan pizza
While there is no evidence that Queen Margherita of Savoy ate the pizza wheel named in her honor in 1889, it does not prevent this delicacy from being a Neapolitan hallmark.
To pay homage to history, Nap’s daisy complies with AVPN rules. It measures approximately 35 centimeters, has honeycombed edges, and can be folded due to its dough flexibility.
It has a generous distribution of Mozzarella with basil, San Marzano tomato and Parmesan.
The original dough is fermented at least 24 hours in advance and is 64-68% water. They are priced between 5.50 and 9.90 euros.
The “Cossack
Another authentic Neapolitan pizza is Nap’s “cosaca”. Very legendary not only because of its antiquity, but also because it was the dish prepared in honor of the visit of Tsar Nicholas II to Naples in 1844.
However, nowadays it does not require so much status. It is a popular pizza. An explosion of basil, tomato and a sprinkling of pecorino.
Much of the secret of Neapolitan pizza is in the dough. They stretch it in a different way, slapping it. This eliminates the excess flour.
