After an extensive career in the gastronomic world, one day Xavier Pellicer decided to change his life and what he had been doing for many years, he wanted to bet on healthy cuisine with an interesting differentiator: the local product.
So what he did was a course in Biodynamic agriculture and an additional one in Ayurvedic nutrition. With this, I knew that I could begin to transmit all the benefits of organic cuisine, made with local and seasonal products, which would also contribute to the care of the environment.
Xavier Pellicer, “The Best Vegetable Restaurant”.
In his restaurant, the chef proves that it is possible to eat healthy and, moreover, to lose oneself in a world of incredible flavors. And this is why, in 2018, it won the award for Best Vegetable Restaurant, an award given by the We’re SmartGreen Guide or Green Guide to Restaurants of the World.
However, this was not the only outstanding award, because Xavier had already won nothing less than a Michelin Star in his previous restaurant: Céleri, the chef has plenty of talent!
But what concerns us in this entry is to talk about this new project which is located at 310 Provença street. There, the sophistication of its cuisine is fused in a perfect way with the authenticity of each of the products that result in completely original dishes.
An incredible card!
When you arrive at this place, you will find an informal space with a bar, where you can try small dishes in tapas format. In addition, there is another space called “El Menjador”, which works only by reservation and offers only three tasting menus: omnivore, vegetarian and vegan.
Let’s talk about the vegetarian menu at Xavier Pellicer, to give you a rough idea:
It includes 1 appetizer, seven courses and a dessert, really original dishes and, of course, delicious.
An appetizer option is, for example, some delicious olives and incredibly delicious dishes, an ajoblanco with salted almond sorbet, biodynamic leek infused with anise and licorice, then leek demi glacé, leek green cream and some super crispy roots.
How about a Barbastro pink tomato salad on fennel and basil cream, mustard emulsion and red curry? doesn’t sound bad at all! And you know what? you will be excited to try the roasted pumpkin dish with Thai curry.
So, among many other dishes that will take your breath away. But wait, dessert is missing! You have to try the fig clafoutis, juicy and mellow.
